What's cooking?
 

Buy ready made sugar cookie dough from your local grocery store.  Prepare according to package instructions.  Mix a drop of green food coloring to store bought vanilla frosting for an Irish touch.  Add green pistachio nuts.  Sprinkle with green powdered sugar! Enjoy!  Fast and easy for any family size. 


Kids find "Chicken Demand" recipe delicious.....


Chicken Demand: ---- Kids,adults, family members, and friends of all ages find this recipe absolutely delicious!  

This can be made the night before and stored in the fridge until you are ready to heat it up.  It is a spin off on Chicken Divan but with a busy mother of five or more sense of urgency. 

Ingredients:                     
1 store bought whole already cooked rotisserie chicken (lemon pepper flavor is best)
                                         2 cans of cream of chicken soup
                                         1 cup of regular mayonnaise (low fat is fine)
                                         1/4 cup curry seasoning 
                                          Salt & Pepper to taste 
                                          1 large package of frozen Broccoli
                                             --Fresh is better!  Two bunches in produce. 
                                          1/4 cup shredded cheddar cheese 
                                           Fresh parsley sprigs for center on top

Pre-Heat oven to 350°.  
Using non-stick spray lightly spray the bottom of a 9 x 13 glass pan.  
Cook (boil or steam) the broccoli on stove.  Strain the water out.  Spread the broccoli on the bottom of the pan evenly.  
Remove chicken meat from the bone of whole rotisserie chicken.  Spread the cooked chicken meat pieces on top of the broccoli.  

In mixing bowl mix the cream of chicken soup, mayonnaise, curry, salt and pepper together.  Spread over the chicken pieces. 
Sprinkle shredded cheddar cheese over top lightly.  Add more salt and pepper to top. 

Cover and place in fridge overnight for next day.  Or if you plan to eat it right away place uncovered in pre heated 350° oven for 15 minutes.  

Carefully remove from oven and serve immediately.  Enjoy!   Note:  This item contains egg products.  You can use low fat soup, low fat cheese, and low fat mayonnaise. You can use less curry if you like. Great family meal!

Beef brisket & Cabbage! 
Corned Beef Brisket and Cabbage
4 1/2 cups of hot water
2 1/2 tbsp of white granulated sugar
2 tbsp of cider vinegar
3/4 tsp of salt & pepper
1 tsp of fresh parsley
2 tbsp of butter
1 large yellow onion cut in quarters
about 3 lbs of corned beef brisket
1 head of green cabbage (cored & wedge cut)
cooking spray
8 medium carrots peeled and sliced
2 whole cloves
1 clove garlic

Spray the bottom of your slow cooker or 'Crock Pot' with non-stick spray.  Place corned beef in slow cooker. Cover with water, cloves, garlic, salt, pepper, bay leaves, cider vinegar, and sugar.  Cook for 3 1/2 hours on high. Skim off the top. Add potatoes, carrots, and onions and cook for 30 minutes more. Then place cabbage in and cook for about 15 minutes.  Check the vegetables for desired tenderness.  It is okay to cook your green cabbage separate on the stove if you like to keep it that clean green color.  Arrange the corned beef slices on a platter and surround with the vegetables.  Brush with butter and sprinkle fresh green parsley on top!  Enjoy.
