1 1/2 cups of butter softened 2 cups of sugar 2 large eggs 2 tsp peppermint extract 1 tsp vanilla extract (can use vanilla only if you don't like peppermint taste -increase to 3 tsp)
4 1/2 cups all purpose flour
red food coloring
Preheat oven to 375°. In large bowl mix the butter and sugar until creamy. Add eggs, vanilla, and peppermint extracts. Mix in the flour.
Take all of the dough and add the red food coloring. Roll out about a tablespoon and a half to about 6 inches long. Shape in the form of a candy cane with open center. Pinch the end to seal together.
Place on ungreased cookie sheet and bake for 10-12 minutes. Do not brown. Makes approximately 50 cookies.
